You could use a little wine wine like a Chardonnay or a Pinot Grigio (I'd use this one first over a Chardonnay personally but both would work) I'm presuming you aren't using a whole lot in your recipe. Originally, I was going to suggest using "mirin" which is a Japanese rice wine. But I got to thinking ...if you can't get Chinese rice wine chances are you probably can't get Japanese rice wine.
